Western Nova w/ Beet Hashbrowns

Serves 4 at $6.41 per Serving

3 Raw Beets, Peeled and Shredded

1 tbsp Corn Starch

3 tbsp Avocado Oil

9 oz. Smoked Pacific Salmon

1/2 c. Diced Red Onion

4 tbsp. Capers

1/2 of a Lemon Cut into Wedges

8 tsp Sour Cream

Fresh Dill

Coat shredded beets in corn starch, adding more if needed to make the mixture nearly dry. Heat avocado oil over medium-high heat, and work beets in batches to fry into a hashbrown patty. Flip, and cook the other side to the desired doneness. Set the beets aside and let them cool completely.  

Evenly divide up the rest of the ingredients. When the beets are completely cooled, combine them as pictured above, seal, and enjoy them as a meal prep breakfast that'll make you feel hella fancy!
